THIS WINE EXPRESSES FRESH STRAWBERRIES AND CHERRIES, A TOUCH OF LIGHT PEPPER, WITH MOUTH-WATERING ACIDITY AND A HAPPY CONCENTRATION AND WEIGHT ON THE PALATE. CLASSICALLY MADE, THE GRAPES WERE WHOLE CLUSTER PRESSED IN A LONG AND GENTLE PRESS CYCLE. THIS WINE IS BEST SERVED COLD, LOOKING OUT ON THE LAKE, THOUGH HAS ENOUGH DEPTH FOR A WINTRY MEAL.

Our Cabernet Franc (and nearby Merlot, Cabernet Sauvignon and Blaufrankisch) come from the original planting on our estate vineyard in the early 1980's. The Cabernet Franc block is on the middle part of our gently sloping vineyard, which rises 600-800 feet above Seneca Lake and is surrounded by Finger Lakes National Forest. The exposure and slope orient toward the western setting sun, and the hillside drains cold winter air and warm summer rains down toward the lake. The soil is the highly valued Honeoye silt loam, which develops on the shoulder slopes of the glacially tilled mixture of limestone and shale. The vines are farmed with regenerative practices with a goal of taking care of the rich biodiversity and regal nearby waters and preserving our natural beauty and ecosystem for future generations. The vines are pruned by hand, and the grapes are hand harvested.
